Ingredients
125g butter
3/4 cup raw sugar
2 eggs
1+ 1/2 cups self raising flour
1/2 cup greek yoghurt
2 tsp lemon rind
1 cup blueberries fresh or frozen
Method
Cream butter and sugar, add beaten eggs and mix together.
Add flour, yoghurt and rind folding it into the mixture.
Lastly fold in the blueberries.
Smooth out evenly into a greased and lined log tin, baking in a moderate oven for approximately 1hr.
Cool in the pan for 10min before turning out.
Once completely cooled you can dust it with some icing sugar, but TG's children love it just as it is!
